Great job! Love how the color palette makes the characters/objects stand out from the world. Only thing I'd adjust is the contrast on the background layers since they kinda blend with the foreground. Other than that, it's very fun and dynamic! Makes me wish we could get more stylized Mario games.

which limited my options on knowing what to use to change the contrast
I am a sucker for hand-painted/illustrative 3D. Good texturing can easily make low-poly assets feel more detailed than they really are. Fantastic job!
I also tend towards simplifying character designs over time. Helps to sort-of "synthesize" their most prominent attributes.
